Hedgehog, either stewed or fried, is regarded as a national dish among European Roma. This distinctive cuisine has origins in survival—during periods of persecution, especially in Poland and the Baltic regions, Roma families would hide in forests and prepare hedgehog as a nutritious meal. The dish is wrapped in clay and baked in a fire, with the clay removing the spines. It remains a treasured symbol of endurance, resourcefulness, and the ability to find nourishment in the wilderness.
